Don Birria began with a pot, a pile of dried chiles, and a refusal to rush. Birria — beef braised for hours until it falls apart at the touch of a fork — isn’t fast food. It’s slow food that happens to be served fast, at a counter, with a cup of consommé hot enough to fog your glasses.
We never wanted a cavernous dining room. We wanted a narrow, honest space and a small patio where the line moves, the micheladas are cold, and the person handing you your tray probably remembers your order. Loud, casual, a little bit family.
What we believe
That tortillas should be pressed the morning you eat them. That salsa should be blistered to order, not poured from a jug. That consommé is not a garnish — it’s the whole point. And that the best compliment a plate can get is silence, because everyone’s busy dipping.
